Spicy Turkey Sausage Meat Sauce




WHAT'S IN IT:
  • 1 lb ground turkey sausage
  • chicken stock
  • tomato paste
  • 1/2 stick butter, unsalted 
  • 1 clove garlic, minced
  • cream
  • onion
  • fresh parsley
  • red chili pepper flakes
  • salt and pepper
  • dried oregano

MAKE IT:
  1. In a large covered sauce pan (the one with the taller sides), melt the butter. As the butter is melting add the tomato paste and mix to make a thick sauce. Once the butter is melted and the tomato paste is combined, add the chicken stock to thin out the sauce. Add the chili pepper flakes, dried oregano, salt, pepper and parsley. Turn the heat to medium-low and let this simmer for about 5 minutes (while you complete the next step).
  2. In a separate pan, brown the turkey sausage on medium heat. Add a little salt and pepper to the sausage while it is browning. Add the chopped onion and garlic. When the sausage is done, drain the excess liquid if necessary and add the sausage and onions to the sauce pan. 
  3. Add the cream and chopped parsley, and heat on medium-low for about 10 minutes. 
  4. Serve over pasta or zoodles (zucchini noodles) for with fresh grated parmesan cheese!


NOTES:
  • If you cannot find ground turkey sausage, you can use breakfast turkey sausage and remove the casings with a knife before browning it in the pan. This will work just as well!
  • This sauce works well with almost any vegetables you like. I added zucchini in the photo above, but you can add whatever you like best.
  • The turkey sausage adds a nice spice to this dish, but you can use regular ground turkey or ground beef as well.
  • This sauce will freeze well in an airtight container for up to about 4 months.
