WHAT'S IN IT:
- 1 16 oz can chickpeas (Garbonzo Beans)
- 1 tsp sea salt
- 1 tsp fresh cracked pepper
- 1 tsp crushed red pepper flakes
- 1 clove garlic, minced
- 1/4 cup EVOO
- 1 lemon, zested and juiced
MAKE IT:
- Drain the chickpeas and rinse them with water in a strainer. Pour them into a food processor with the pealed garlic, salt, pepper, red pepper flakes. Zest half of the lemon into the food processor and juice the whole lemon.
- Process until you get the texture you want. Add EVOO as necessary if it appears to be getting too dry. The longer you process it, the smoother the hummus will be.
- Serve with a drizzle of EVOO on the top.
NOTES: Traditional hummus recipes call for tahini paste, a paste made from toasted sesame seeds. It can be expensive at the grocery store and in my opinion isn't essential for great tasting hummus. However, if you want that real traditional hummus taste, tahini paste will do the trick.
I have never seen hummus that looks this delicious. I'm going to make some tonight!
